My Old Stuff - Kit #1!

The Great Scrap Room transformation of 2010 caused me to go through every inch of my scrappy stash. Wow, that's a lot of stuff! ::blush::

I have too much. There, I've admitted it! So how do we handle this dilemma? Well, I give some of my stuff to YOU, of course! It's a win-win, really. You get some of my older (but still awesome!) product and I make some room on my shelves. For more product. Wait a minute...

Let's not get too far ahead of ourselves. ;-)

Over the next few months (I am ashamed to tell you exactly how many of these kits there are...) I will be giving away kits of goodies. This month, for this Autumn-friendly September Kit, I want you to leave a comment and give me a recipe for your favorite apple dish. As I mentioned in the previous post we have an abundance of crisp apples and I live for this time of year just for the apple recipes alone. I will eat them ten ways from Sunday and not be tired of them.

The kit includes products from My Mind's Eye, Cosmo Cricket, Die Cuts With a View, Creative Imaginations, Daisy D's, Heidi Swapp and more.

The link for the apple recipe didn't post the first time, so I'll try again! I made this for the first time on Saturday, and it disappeared quickly! It's really quite versatile, too :)

I love this apple cake, so moist and apple-y. Ive tried it with a ton of different types of apples and they are all good. I don't use the nuts though.

Mom’s Apple Cake

6 apples, Mom uses McIntosh apples
1 tablespoon cinnamon
5 tablespoons sugar

2 3/4 cups flour, sifted
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 teaspoons vanilla
4 eggs
1 cup walnuts, chopped (optional)

Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.

Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.

Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.

EASY CARAMEL APPLE PIE

10 caramel candies
1/3 c. flour
3 c. Jonathan or Rome apples, chopped
2/3 c. caramel ice cream topping
2 tsp. lemon juice
1/2 c. pecan pieces
1 (9 inch) frozen pie crust

Combine the 10 caramel candies, each cut into 4 pieces, and flour, apples, caramel topping, and the lemon juice; mix well. Pour mixture into frozen pie crust and sprinkle with the pecan pieces. Bake at 375 degrees on a preheated baking sheet for 40 to 45 minutes. Do not refrigerate.

My favorite is apple crisp - from the Betty Crocker cookbook.

4 cups sliced apples
2/3 to 3/4 cup brown sugar
1/2 cup flour
1/2 cup oats
1/4 tsp cinnamon
1/3 cup margarine softened.

Place apples in baking dish.
Mix other ingredients and sprinkle over apples. Bake at 375 for 30 minutes.

Apple German Cake


Ingredients

* 2 eggs
* 1 cup vegetable oil
* 2 cups white sugar
* 2 teaspoons ground cinnamon
* 1/2 teaspoon salt
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 4 cups apples - peeled, cored and diced

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
2. In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
3. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
4. Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

Love the kit.

Here is a simple recipe. I love this for lunch. Filling:)

1 can solid white tuna..break apart w/ fork. Dice up an apple (I use honey crisp, only apple I will eat), add raisins, olive oil, to your liking and diced celery and onion:)
